Antioxidant Power Chia Pudding

  • 1 cup unsweetened or sweetened almond milk
  • (optional) ½ cup low-fat Greek yogurt
  • ¼ cup chia seeds
  • ½ teaspoon vanilla extract
  • Sliced strawberries
  • A handful of Truronia aronia berries
  • Granola for topping


1. Mix the chia seeds and almond milk in a mason jar or other container, add in the vanilla extract. If you want a creamier, thicker pudding consistency, add in low-fat Greek yogurt.
2. Mix well in the container and cover the pudding.
3. Set in the fridge overnight.
4. When ready to eat, place strawberries, frozen Truronia aronia berries, and your choice of granola on top of the chia seed pudding.
